My favorite class so far has been FDSC 1101, the ice cream class. Getting to develop a completely new flavor for the Dairy Bar was such a fun introduction to product development and food science. We spent time learning about formulation, flavor balance, and the intended consumer, and then actually applied it in the PD kitchen. It was an amazing hand-on class and a great way to start off in Food Science.
